Super Simple Banana Pancakes
Serves: 2 - 4 | Prep Time: 5 minutes | Cook Time: 20 minutes
Ingredients
3 large green plantains, peeled
3 large eggs
1 banana, peeled and sliced
1/4 cup butter (or ghee or coconut oil), for cooking
Sea salt
Directions
Add plantains and eggs to the blender. Blend until smooth.
Peel 1 banana and slice into circles. Set aside.
Melt 1 tablespoon of butter in a skillet over medium heat.
Pour plantain batter into pancakes in the hot skillet, press a few banana slices into each pancake and cook until the top starts to dry and the edges brown, about 2 - 3 minutes on each side.
Top with a sprinkle with sea salt, and serve with a side of scrambled eggs, bacon.
